Roastie Hearts

With Valentines fast approaching, I thought I’d try shaping b’s veggies into the obligatory heart. Now some veg works well, others not so well…Here I used carrot, courgette (zucchini for any readers across the pond) and potato. I par-boiled the potato and did so a tiny bit too long. I ended up with some broken hearts :/

I brushed them with a bit of olive oil and pepper and roasted for around 20-30 minutes. Until they went brown. And there you go, loved up roastie veggies. Ideal as a side or part of a meal.
