I know, I know, I’m late with the new year wishes and all. Honestly, I have been completely lazy over the Christmas hols and pretty much binge watched Netflix and read some books. I had all good intentions of creating ideas for the blog, working on some new things and recipes…but yeah, it just didn’t happen. Sorry!
So we kick off the new year with salad and some attempts at making it exciting…First up is the sunshine salad. Sunshine because we used some little yellow peppers and grated a load of carrot. I started with the leaves and also added some celery.
Next up I added some sugar snap peas for a bit of crunch and the peppers. For some protein, some chopped up chicken.
I think the thing to remember when making quick meals for your little ones is to go with whatever you have in the fridge or cupboard. I used these particular veggies because they were what I had in. Same with the chicken. Anything would work though – a boiled egg, some tuna, more veggies, seeds, pasta -the choice is yours 🙂
